Recipe: Southwest Chicken Salad

When you’re smack dab in the heat of summer, a hot kitchen doesn’t hold a lot of appeal. Main dish salads are a great option for beating the summer meal blahs. This “recipe” becomes a choose-your-own-adventure as you pick from among your favorite ingredients to build your perfect salad creation.

1. Start with a base of greens:

  • Bagged lettuce
  • Spinach
  • Romaine
  • Baby lettuce

2. Pick your favorite add-ons:

  • Red bell pepper
  • Sweet corn
  • Red onion
  • Black beans
  • Quinoa
  • Jalapeños
  • Fresh tomatoes
  • Black olives
  • Avocado

3. Add a little crunch:

  • Tortilla strips
  • Croutons
  • Pecans
  • Pepitas

4. Add your chicken:

  • Rotisserie
  • Nuggets
  • Shredded (cooked in your slow cooker or pressure cooker with some taco seasoning)
  • Grilled

5. Top with some cheese:

  • Colby jack
  • Pepper jack
  • Sharp cheddar
  • Taco blend

6. Drizzle that dressing:

  • Avocado Lime
  • Ranch
  • Southwest
  • Salsa
  • Creamy Cilantro
