Favorite Recipe: Pomegranate Salsa

There’s a lot to love about winter produce, and one of our favorites is the gorgeous pomegranate. There are tons of health benefits packed into this member of the berry family. It boasts 7 grams of fiber and 3 grams of protein per cup and is packed with Vitamin C and Vitamin K.

This tart and fruity salsa brings a hint of summer to these dreary early spring days.

Ingredients:

  • 3 pomegranates, seeded
  • Handful of mint, chopped
  • Handful of cilantro, chopped
  • ½ lime, juiced
  • ½ red onion, finely chopped
  • ½ jalapeno, finely chopped
  • Salt to taste

Directions:

Toss all the ingredients together and enjoy with pita or tortilla chips. Healthy and delicious!
