Nothing says “summer” quite like the sweet-tart tang of fresh strawberries. This salad is a perfect side dish to help cool you down on a hot August evening. Or throw on some sliced grilled chicken to turn it into a light, healthy meal!
Ingredients:
- 2 TBS extra-virgin olive oil
- 1 TBS red wine vinegar
- 1/2 shallot, diced
- 4 cup mixed greens
- 2 baby cucumbers, chopped
- 2 cups strawberries
- Salt and pepper to taste
Directions:
Combine vinegar and diced shallot in a bowl. Season with salt and black pepper. Pour olive oil into the mixture while whisking to form a dressing. Combine the mixed greens and chopped cucumbers in a bowl. Pour the dressing and strawberries over the mixture and toss. Season with salt and pepper, then serve.
